Trying to eat healthy surrounded by temptations is not always an easy task, and curbing your cravings with an alternative that actually contributes with nutrients, is often not as satisfying as eating what your body is actually screaming for. But you are smarter than your body, and you know that satisfying your cravings is not what your body needs. Fixing a craving for something sweet is easily done with nice cream or date balls which are both so good I’m normally perfectly good with the healthy alternative, because it still tastes deliciously sinful while being packed with nutrients that your body needs. But satisfying a craving for something salty is different. I really like salt and vinegar chips. Like a lot. A lot, a lot. And finding a healthier alternative that will satisfy my hunger for a salty snack has not been easy.
When you buy salted treats from the store, they usually contain a lot of salt, and bad oils, and I haven’t yet found a brand that I want to use. But this January I discovered an incredibly easy recipe from Sofia Sommer that I really liked, and thought I’d share it with you. These salted almonds do contain a great deal of natural fat, as all nuts do. She makes them with thyme, which tastes incredible, but I’m a chilli girl so I have exchanged the thyme for dried chilli flakes in this recipe.
To make a nice big batch you’ll need
1 1/2 dl boiling water
1/2 dl sea salt
2 dl almonds
1/2 teaspoon dried chilli flakes
A sprinkle of smoked paprika powder
A pinch of sea salt to top it off
This is what you do
Dissolve the salt in the boiling water, add the almonds, and leave them to soak for 15 minutes. Preheat your oven to 180 degrees celcius, and cover a baking tray with parchment paper. Drain the almonds and place them on the baking tray, sprinkle with sea salt and chilli and bake them in the oven for just about 15 minutes. Store them at room temperature in an air tight container.
These almonds are really great if you just want a salty snack, with a glass of wine, if you are serving tapas, cheese, or any other kind of nibble worthy dinner, and they also taste really good sprinkled on salad or served with avocado. I will work on figuring out how to make them salt and vinegar flavored, but for now this is more than enough. Give it a go, and let me know if you come up with other great flavours!
