The citrus season has finally arrived, and we are presented with delicious ripe grapefruit, oranges and blood oranges (so good!!!), so I though I’d share a little citrus recipe with you. Anyone who has ever cooked with me knows that I’m tempted to put some kind of citrus in almost anything I’m making. Sweet, sour, fruity, what more can you want?! I’m going to dedicate the recipes this month to the gorgeous citrus fruits we have access to these days, and show you different ways to use these little treasures. Lime, lemon, grapefruit and the different kinds of oranges are all perfect for a range of different dishes, and I want to share some ways to incorporate these beauties in your diet.
I’m going to use grapefruits for this because I love the combination of the sour fruit combined with the sweet caramelized brown sugar but you can use oranges if you prefer it to be a little sweeter.
To make gorgeous baked grapefruit for two (or a nice big portion for yourself) you’ll need
1 big, ripe grapefruit
1 tablespoon dark brown sugar (the sticky kind, like muscovado sugar)
A hint of vanilla
¼ teaspoon dried chilli
A pinch of salt
Cut your grapefruit in half and place the two pieces on a baking sheet or in an oven safe dish with the cut side up. Combine the vanilla and brown sugar in a little bowl and sprinkle it evenly on top of the grapefruit. Bake on 200’C for between 2 and 6 minutes, and if your oven has a broiler (grill), use that for an even more caramelized end result. When these babies are in the oven, it’s super important that you stay close to your oven and don’t get distracted (no answering the phone or checking instagram), because things can go from amazing to burnt and disgusting in less than a minute, especially if you are using the broiler.
The grapefruit is done when it’s deliciously plump and the sugar is perfectly caramelized, remove it from the oven and leave to cool for a few minutes. Put your half in a bowl, give the other to a loved one, grab a couple of spoons and enjoy! Important to note: make sure to use all the dark golden syrup that has probably gathered around the grapefruit in the oven. Just drizzle it on top of the two halves once you have placed them in their bowls.
I love weekday desserts that are not packed with sugar (less than a teaspoon in each portion), and using the seasonal fruits means it’s packed with flavour and oh so satisfying. I think it is super hard to get back into a good routine after a month of eating a lot more sugar than I usually do due to the many delicious Christmas traditions, and this little recipe is a really nice alternative when I crave chocolate, marzipan, cookies, all that.
