My favourite recipes are the ones that are super simple, and this one might be the easiest recipe I have posted so far. It has one single ingredient, and all you have to do is to put it in a food processor or blender, and wait for the magic to happen. The only thing you need to be aware of is that different peanut brands add very different amounts of salt to their peanuts, so be sure to read the label. I use peanuts with less than 1% salt added, but you can also use raw nuts, and add I little salt at the end.
This peanut butter tastes so wonderful that you don’t really believe that there is almost no effort involved in making it, and the first time I tried to make it, I didn’t really believe that it would be this easy, but you can seriously not go wrong with this recipe. There is no possible way of fucking it up! Perfect!
To make a nice little jar of peanut butter you will need
250g roasted and slightly salted peanuts
(I must admit I always go for a double portion, but this a good start)
Put the peanuts in the food processor or blender, and leave it for about 10-15 minutes. There are a lot of different stages before it turns into a smooth texture, so don’t panic if it looks nothing like peanut butter for the first 8 minutes. If you want chunky peanut butter, you can stop a bit earlier, the last five minutes are for perfecting the texture. I like it super smooth, but that’s just me! When it has the perfect consistency, pour it into a suitable container and store it at room temperature.
This tastes perfect on waffles and toasted bread with a little sliced banana on top, or as a perfect combination with sliced apple as a little snack. Peanuts has a lot of (good) fat in them, so when I’m eating this, I make sure that I don’t eat a lot other nuts the same day, so it is simply a part of my diet. A little handful of nuts a day is perfectly healthy, and that makes up for a slice of bread of a nice little waffle with peanut butter on it!
