Easter is over, we’re in the middle of spring, and very soon we will be getting our hands on wonderful summer fruits, vegetables and berries and I can’t wait! I’m a big fan of eating what’s in season, because of the depth to the flavour that comes along with it. For years I thought that I hated tomatoes, only to find out that I loved them in the summer when they were just right, and guess what; in season! Winter with it’s root vegetables has left me craving lighter summer varieties and I’m looking forward to life being a little bit easier when it comes to eating healthy.
In the winter I find it incredibly hard to stay off sweets, as I don’t find the sweet alternatives of the season very satisfying, and I really don’t want to eat blueberries from Chile or strawberries from Spain when I know how the real deal tastes (plus, knowing how workers are treated and the obvious environmental factors weigh heavy on me too). However, when summer comes, and fresh berries and wonderful fruits are lined up, eating healthy and more sugar free is a lot easier. I would trade in my chocolate for watermelon, raspberries or ripe figs any day!
To keep myself inspired to eat wonderful things, and feed my body, as apposed to what my mind is craving, even though it is sometimes a very real and demanding struggle, I like having a mood board in the kitchen that remind and inspire me to eat good things. I change the mood board every once in a while, and yesterday I decided that from now on, it’ll be inspired by the season!
Mixed up with all those glorious colours, I like to put in a few things that will make me smile whenever I look at it. A photo of my me and my wonderful father on a very important day, drawings my sister gave when she was little (they might be the cutest hedgehogs ever), a little note one of my roommates left for me one morning, my grandmother and grandfather’s engagement photo and a little heart from my mother.
The inscription on the heart is very special to me. My mom has always called me “honninghumla” which means honey bee in Norwegian. She says I smelled like honey when I was born, and I just love that she is still using that name. Inspired by this wonderful summer mood board, I made this incredible avocado sandwich that I will give you the recipe for later this week. Here’s a little sneak peak!
